How to change MetaClass on a Variant using the Service Api?

Is the recommended way of changing the MetaClass on a Variant using the Service Api deleting and recreating it?

Simply changing it leads to an error.

Yes deleting it and recreating it is the way. Content type is immutable, so it will throw error if you try to change the MetaClass (that was added in a later version)
